🍗 Oven Roasted Chicken and Potatoes

Description

🥔 Juicy, golden chicken baked together with soft, crispy potatoes — a comforting one-pan dish that brings warmth to every bite.

Ingredients

🍗 1 whole chicken (cut into pieces) or 4–6 chicken thighs

🥔 800g potatoes, peeled and chopped

🧄 4 garlic cloves, crushed

🧅 1 onion, sliced (optional)

🛢️ 4 tbsp olive oil

🌿 1 tsp dried rosemary or thyme

🍋 Juice of ½ lemon

🧂 Salt and pepper, to taste

💧 100ml water or light broth

Preparation

1. 🔥 Preheat your oven to 200°C (400°F).

2. 🍗 Season the chicken pieces with salt, pepper, herbs, garlic, and lemon juice. Let them marinate for about 15 minutes.

3. 🥔 In a large baking dish, toss potatoes (and onion, if using) with salt and 2 tablespoons of olive oil.

4. 🔄 Place the seasoned chicken pieces on top of the potatoes. Drizzle remaining olive oil over everything.

5. 💧 Add water or broth to the bottom of the pan to keep the dish juicy while roasting.

6. 🔥 Bake uncovered for 45–55 minutes, or until the chicken is golden and cooked through, and the potatoes are soft with crispy edges.

7. 🥄 Turn the chicken and stir the potatoes once during baking for even color and flavor.

8. 🍽️ Serve warm, straight from the pan, with a green salad or crusty bread.
