Description
🥔 Juicy, golden chicken baked together with soft, crispy potatoes — a comforting one-pan dish that brings warmth to every bite.
Ingredients
- 🍗 1 whole chicken (cut into pieces) or 4–6 chicken thighs
- 🥔 800g potatoes, peeled and chopped
- 🧄 4 garlic cloves, crushed
- 🧅 1 onion, sliced (optional)
- 🛢️ 4 tbsp olive oil
- 🌿 1 tsp dried rosemary or thyme
- 🍋 Juice of ½ lemon
- 🧂 Salt and pepper, to taste
- 💧 100ml water or light broth
Preparation
- 1. 🔥 Preheat your oven to 200°C (400°F).
- 2. 🍗 Season the chicken pieces with salt, pepper, herbs, garlic, and lemon juice. Let them marinate for about 15 minutes.
- 3. 🥔 In a large baking dish, toss potatoes (and onion, if using) with salt and 2 tablespoons of olive oil.
- 4. 🔄 Place the seasoned chicken pieces on top of the potatoes. Drizzle remaining olive oil over everything.
- 5. 💧 Add water or broth to the bottom of the pan to keep the dish juicy while roasting.
- 6. 🔥 Bake uncovered for 45–55 minutes, or until the chicken is golden and cooked through, and the potatoes are soft with crispy edges.
- 7. 🥄 Turn the chicken and stir the potatoes once during baking for even color and flavor.
- 8. 🍽️ Serve warm, straight from the pan, with a green salad or crusty bread.
