Ingredients
- 🥩 400 g ground beef (14 oz)
- 🧅 80 g onion, finely chopped (2.8 oz or 1 small onion)
- 🧄 2 garlic cloves, minced
- 🥚 1 egg
- 🍞 30 g breadcrumbs (1/3 cup)
- 🧂 Salt and black pepper to taste
- 🌿 2 g fresh oregano, chopped (1 tsp)
- For the sauce:
- 🍅 300 g tomatoes, chopped (10.5 oz or ~3 medium)
- 🌶 1 chipotle pepper in adobo, minced
- 🧄 1 garlic clove
- 🧅 50 g onion, chopped (1.75 oz)
- 🧴 15 ml vegetable oil (1 tbsp)
- 💧 250 ml water or broth (1 cup)
Preparation
- 1️⃣ In a bowl, combine beef, onion, garlic, egg, breadcrumbs, oregano, salt, and pepper. Mix well and form into small balls.
- 2️⃣ In a saucepan, heat oil and sauté onion and garlic for sauce until soft.
- 3️⃣ Blend sautéed onion, garlic, tomatoes, and chipotle with water or broth until smooth.
- 4️⃣ Return sauce to pan and bring to a boil.
- 5️⃣ Gently place meatballs in sauce. Reduce heat, cover, and simmer for 25–30 minutes.
- 6️⃣ Serve with rice or warm tortillas 🌾🌮
