These smoky and tender Mexican albóndigas are slow-simmered in a chipotle-tomato sauce that fills your kitchen with the aromas of tradition. A comforting and bold main dish that warms the soul and satisfies every bite 🌶️🍅
Ingredients
- 🥩 400 g ground beef (14 oz)
- 🍚 60 g cooked rice (1/4 cup)
- 🧅 1 small onion, finely chopped
- 🧄 2 garlic cloves, minced
- 🧂 1 tsp salt (5 g / 0.18 oz)
- 🧑🍳 1 egg
- 🌿 1 tbsp fresh cilantro, chopped (15 g / 0.5 oz)
- 🌶️ 2 chipotle peppers in adobo, chopped
- 🍅 3 tomatoes, blended
- 🫒 1 tbsp oil (15 ml / 0.5 fl oz)
- 💧 250 ml water (1 cup)
Preparation
- 1️⃣ In a bowl, mix ground beef, rice, onion, garlic, egg, cilantro, and salt. Form into small meatballs.
- 2️⃣ Blend tomatoes with chipotle peppers and a pinch of salt.
- 3️⃣ Heat oil in a deep pan. Pour in the chipotle-tomato sauce and cook for 5 minutes.
- 4️⃣ Add the meatballs and water. Cover and simmer on low for 25–30 minutes.
- 5️⃣ Serve with warm tortillas or rice 🌾
