๐ฑ Crispy phyllo layers filled with juicy mushrooms, caramelized leeks, and herbs โ this plant-based pie is comforting, flaky, and full of earthy flavor.
๐ฅฌ 1 large leek (white and light green parts), finely sliced
๐ 300g mushrooms (button or mixed), chopped
๐ง 2 garlic cloves, minced
๐ข๏ธ 3 tbsp olive oil (plus more for brushing)
๐ฟ 1 tsp dried thyme or oregano
๐ง Salt and pepper, to taste
๐พ 300g phyllo pastry (store-bought or homemade)
๐ Optional: a few drops of lemon juice for brightness
1. ๐ง In a pan, heat 3 tbsp olive oil. Sautรฉ leeks until soft and slightly golden.
2. ๐ Add mushrooms, garlic, herbs, salt, and pepper. Cook until liquid evaporates and mixture is rich and savory. Let cool.
3. ๐งด Preheat oven to 190ยฐC (375ยฐF). Lightly oil a baking tray or pan.
4. ๐ Layer 4โ5 sheets of phyllo in the pan, brushing each with oil.
5. ๐ฅฃ Spread the mushroom-leek mixture evenly.
6. ๐ Cover with 4โ5 more phyllo sheets, again brushing each layer with oil.
7. ๐ช Score the top lightly with a knife and brush with more oil.
8. ๐ฅ Bake 30โ35 minutes, until golden and crisp. Let cool slightly before serving.
