๐Ÿฅง Mushroom and Leek Phyllo Pie (Vegan)

๐ŸŒฑ Crispy phyllo layers filled with juicy mushrooms, caramelized leeks, and herbs โ€” this plant-based pie is comforting, flaky, and full of earthy flavor.

Ingredients

๐Ÿฅฌ 1 large leek (white and light green parts), finely sliced

๐Ÿ„ 300g mushrooms (button or mixed), chopped

๐Ÿง„ 2 garlic cloves, minced

๐Ÿ›ข๏ธ 3 tbsp olive oil (plus more for brushing)

๐ŸŒฟ 1 tsp dried thyme or oregano

๐Ÿง‚ Salt and pepper, to taste

๐ŸŒพ 300g phyllo pastry (store-bought or homemade)

๐Ÿ‹ Optional: a few drops of lemon juice for brightness

Preparation

1. ๐Ÿง… In a pan, heat 3 tbsp olive oil. Sautรฉ leeks until soft and slightly golden.

2. ๐Ÿ„ Add mushrooms, garlic, herbs, salt, and pepper. Cook until liquid evaporates and mixture is rich and savory. Let cool.

3. ๐Ÿงด Preheat oven to 190ยฐC (375ยฐF). Lightly oil a baking tray or pan.

4. ๐Ÿ“„ Layer 4โ€“5 sheets of phyllo in the pan, brushing each with oil.

5. ๐Ÿฅฃ Spread the mushroom-leek mixture evenly.

6. ๐Ÿ“„ Cover with 4โ€“5 more phyllo sheets, again brushing each layer with oil.

7. ๐Ÿ”ช Score the top lightly with a knife and brush with more oil.

8. ๐Ÿ”ฅ Bake 30โ€“35 minutes, until golden and crisp. Let cool slightly before serving.
