- For the apples

- π Lemon juice for anti-browning (bowl of cold water + 1 tbsp): 15 ml (1 tbsp / 0.5 fl oz)
- Walnut filling
- π° Walnuts, finely ground: 150 g (1Β½ cups / 5.3 oz)
- π§ Unsalted butter, melted: 30 g (2 tbsp / 1 oz)
- π Sugar: 40 g (3 tbsp / 1.4 oz)
- π§ Pinch of salt: 1 g (β
tsp / 0.04 oz)
- πΏ Vanilla extract: 5 ml (1 tsp / 0.17 fl oz)
- π₯ Ground cinnamon: 1 g (Β½ tsp / 0.04 oz)
- π Finely grated lemon zest: 1 tsp (2 g / 0.07 oz)
- π₯ Milk (as needed to bind): 15β30 ml (1β2 tbsp / 0.5β1 fl oz)

Preparation
- 1οΈβ£ Make syrup: In a wide pot, simmer water, sugar, lemon juice, lemon peel, and cloves for 5 min.
- 2οΈβ£ Prep apples: Peel and core from the stem end, keeping bottoms intact. Hold in lemon water.
- 3οΈβ£ Poach: Transfer apples to the simmering syrup; cook 8β10 min until just tender but not collapsing. Lift out; keep syrup warm.
- 4οΈβ£ Filling: Stir walnuts, melted butter, sugar, salt, vanilla, cinnamon, and lemon zest. Add milk 1 tbsp at a time to make a moist, packable mixture.
- 5οΈβ£ Fill: Pack walnut filling into the warm apples, slightly mounded. Return apples to the pot; spoon syrup over. Simmer 3β4 min to set.
