Ingredients
- 🥒 Cucumber, coarsely grated & salted: 300 g (2 cups / 10.6 oz)
- 🥛 Plain strained yogurt (Balkan/Greek, 5–10%): 400 g (1⅔ cups / 14 oz)
- 🧄 Garlic, very finely minced: 6 g (2 cloves / 0.2 oz)
- 🫒 Extra-virgin olive oil: 30 ml (2 tbsp / 1 fl oz)
- 🍋 Fresh lemon juice: 15 ml (1 tbsp / 0.5 fl oz)
- 🌿 Fresh dill, finely chopped: 2 tbsp (8 g / 0.28 oz)
- 🌿 Fresh mint, finely chopped (optional): 1 tbsp (4 g / 0.14 oz)
- 🧂 Salt: to taste (≈4 g / ¾ tsp)
- ⚫ Black pepper: 1 g (¼ tsp / 0.04 oz)
Preparation
- 1️⃣ Toss grated cucumber with a pinch of salt; rest 10 min, then squeeze very dry in a towel.
- 2️⃣ In a bowl, whisk yogurt, olive oil, lemon juice, garlic, dill (and mint, if using).
- 3️⃣ Fold in the dried cucumber; season with salt and pepper. Chill 10–15 min; serve.
