  1. 1️⃣ Make dough: Mix 🌾 flour and 🧂 salt. Add 💧 water, 🫗 oil, and 🍋 vinegar; knead 6–8 min to smooth. Rest, covered, 30 min.
  2. 2️⃣ Filling: Whisk 🥛 yogurt and 🥚 eggs; fold in 🧀 cheese, season with a pinch of 🧂 and ⚫.
  3. 3️⃣ Roll sheets: Divide dough into 4 balls. On a lightly oiled surface, roll each as thin as you can (or hand-stretch) to ~60×40 cm (24×16 in).
  4. 4️⃣ Brush & fill: Brush the sheet with a mix of 🫗 oil + 🧈 butter. Spoon thin lines of filling along the long edge; roll into a rope.
  5. 5️⃣ Coil: Place the first rope in the center of a 30 cm / 12 in oiled round pan; coil. Attach remaining ropes end-to-end to fill the pan. Brush the top and drizzle 💧 sparkling water.
  6. 6️⃣ Bake: Bake at 190°C / 375°F 35–45 min until deep golden and crisp. Rest 10 min before cutting.
