Ingredients
- Dough
- 🌾 All-purpose flour: 400 g (3⅓ cups / 14.1 oz)
- 💧 Warm water: 220 ml (¾ cup + 2 tbsp / 7.4 fl oz)
- 🫗 Sunflower oil: 15 ml (1 tbsp / 0.5 fl oz)
- 🍋 White vinegar (elasticity): 5 ml (1 tsp / 0.17 fl oz)
- 🧂 Salt: 6 g (1 tsp / 0.21 oz)
- Filling
- 🧀 Sirene/feta, crumbled: 300 g (2 cups / 10.6 oz)
- 🥛 Thick plain yogurt: 200 g (¾ cup / 7 oz)
- 🥚 Eggs: 2 large (≈100 g / 3.5 oz)
- 🧂 Salt: to taste (≈1 g / ¼ tsp) — only if cheese is mild
- ⚫ Black pepper: 0.5 g (⅛ tsp / 0.02 oz)
- Brushing & finish
- 🫗 Sunflower oil (for sheets): 80 ml (⅓ cup / 2.7 fl oz)
- 🧈 Melted butter (optional, richer): 40 g (3 tbsp / 1.4 oz)
- 💧 Sparkling water (for lift on top): 30 ml (2 tbsp / 1 fl oz)
Preparation
- 1️⃣ Make dough: Mix 🌾 flour and 🧂 salt. Add 💧 water, 🫗 oil, and 🍋 vinegar; knead 6–8 min to smooth. Rest, covered, 30 min.
- 2️⃣ Filling: Whisk 🥛 yogurt and 🥚 eggs; fold in 🧀 cheese, season with a pinch of 🧂 and ⚫.
- 3️⃣ Roll sheets: Divide dough into 4 balls. On a lightly oiled surface, roll each as thin as you can (or hand-stretch) to ~60×40 cm (24×16 in).
- 4️⃣ Brush & fill: Brush the sheet with a mix of 🫗 oil + 🧈 butter. Spoon thin lines of filling along the long edge; roll into a rope.
- 5️⃣ Coil: Place the first rope in the center of a 30 cm / 12 in oiled round pan; coil. Attach remaining ropes end-to-end to fill the pan. Brush the top and drizzle 💧 sparkling water.
- 6️⃣ Bake: Bake at 190°C / 375°F 35–45 min until deep golden and crisp. Rest 10 min before cutting.
