🍲 Bey's Soup (Begova Čorba) – Rich, Creamy & Traditional

Description

A classic Bosnian soup full of deep, comforting flavors. Made with chicken, vegetables, and okra – thick, warm and perfect for a hearty meal.

Ingredients

πŸ— 300 g chicken meat (breast or thigh, skinless)

πŸ₯• 2 carrots

πŸ§… 1 onion

🍚 2 tbsp rice

🌿 50 g dried okra (or fresh if available)

πŸ§‚ Salt, pepper to taste

🌿 Fresh parsley for garnish

For the thickener:

🧈 1 tbsp butter

πŸ₯£ 1 flat tbsp flour

πŸ₯› 100 ml sour cream

πŸ₯š 1 egg yolk

Preparation

1️⃣ Cook the πŸ— chicken in 1 liter of water with πŸ§… chopped onion and πŸ₯• carrots. Add salt.

2️⃣ Once tender, remove the chicken, shred it, and return it to the soup.

3️⃣ Add rinsed 🍚 rice and 🌿 okra. Cook for another 15 minutes until everything softens.

4️⃣ In a small pan, melt 🧈 butter and add flour to make a roux. Add one ladle of the soup to blend.

5️⃣ In a bowl, whisk πŸ₯› sour cream and πŸ₯š egg yolk, then slowly combine with the roux.

6️⃣ Pour the mixture into the soup, stir well and let it simmer for 2–3 more minutes.

7️⃣ Sprinkle with chopped parsley before serving.
