  1. 1️⃣ Soften the dates for a perfectly smooth blend
  2. Pour 120 ml hot water (½ cup / 4 fl oz) over the dates and rest 5 minutes, then drain well. This prevents gritty bits.
  3. 2️⃣ Build the blender in the right order
  4. Add milk and yogurt first. Add drained dates, pistachios, frozen banana, cardamom, salt, and honey if using.
  5. 3️⃣ Blend for silkiness
  6. Blend 45–60 seconds on high until fully smooth. If you see pistachio specks, blend 15 seconds more.
  7. 4️⃣ Adjust thickness like a pro
  8. For thicker, add ice and blend 10 seconds.
  9. For thinner, add 30–60 ml milk (2–4 tbsp / 1–2 fl oz) and blend 5 seconds.
  10. 5️⃣ Serve and finish
  11. Pour into a chilled glass. Top with chopped pistachios and a tiny pinch of cinnamon if you like.
