Ingredients
- 🥛 350 ml cold milk (1½ cups / 12 fl oz)
- 🥄 120 ml plain Greek yogurt (½ cup / 4 fl oz)
- 🌴 80 g Medjool dates, pitted (6 large / 2.8 oz)
- 🌰 40 g shelled pistachios, unsalted (⅓ cup / 1.4 oz)
- 🍌 120 g frozen banana slices (1 medium / 4.2 oz)
- 🍯 10–15 ml honey, optional (2–3 tsp / 0.34–0.5 fl oz)
- 🌿 1 g ground cardamom (¼ tsp / 0.04 oz)
- 🧂 1 g fine sea salt (⅛ tsp / 0.04 oz)
- 🧊 120 g ice, optional for extra thickness (1 cup / 4.2 oz)
- Finish
- 🌰 10 g chopped pistachios (1 tbsp / 0.35 oz)
- 🌺 1 g ground cinnamon, optional (¼ tsp / 0.04 oz)
Preparation
- 1️⃣ Soften the dates for a perfectly smooth blend
- Pour 120 ml hot water (½ cup / 4 fl oz) over the dates and rest 5 minutes, then drain well. This prevents gritty bits.
- 2️⃣ Build the blender in the right order
- Add milk and yogurt first. Add drained dates, pistachios, frozen banana, cardamom, salt, and honey if using.
- 3️⃣ Blend for silkiness
- Blend 45–60 seconds on high until fully smooth. If you see pistachio specks, blend 15 seconds more.
- 4️⃣ Adjust thickness like a pro
- For thicker, add ice and blend 10 seconds.
- For thinner, add 30–60 ml milk (2–4 tbsp / 1–2 fl oz) and blend 5 seconds.
- 5️⃣ Serve and finish
- Pour into a chilled glass. Top with chopped pistachios and a tiny pinch of cinnamon if you like.
