This is the cake nona made when she wanted something sweet but not heavy. Ricotta gives it that soft, creamy texture, while fresh lemon zest brings a clean, citrusy kick that lingers in the best way. It’s not too sweet, not too rich – just right. Best served with coffee, gossip, or both.
Ingredients
- 🥚 3 large eggs
- 🍋 Zest of 1 lemon + 2 tbsp (30 ml) lemon juice
- 🧀 250 g (9 oz) ricotta cheese
- 🍬 120 g (2/3 cup) sugar
- 🌾 80 g (2/3 cup) all-purpose flour
- 🧈 60 g (1/4 cup) unsalted butter, melted
- 🧂 1/2 tsp baking powder
- 🌿 Powdered sugar for dusting (optional)
Preparation
- 1️⃣ Preheat oven to 180°C (350°F).
- 2️⃣ In a bowl, whisk 🥚 eggs and 🍬 sugar until light and fluffy.
- 3️⃣ Add 🍋 lemon zest + juice, then 🧀 ricotta. Mix until smooth.
- 4️⃣ Stir in 🧈 melted butter, then gently fold in 🌾 flour and 🧂 baking powder.
- 5️⃣ Pour into a greased 20 cm (8-inch) round pan.
- 6️⃣ Bake for 30–35 min or until golden and set in the center.
- 7️⃣ Cool and dust with 🌿 powdered sugar before serving.
