🥔🥬 Grandma’s Creamy Tuscan Soup (Bold, Hearty, and Spoon-Licking Good)

Ingredients

🥔 3 medium potatoes (about 600 g / 1.3 lb), diced

🥬 2 handfuls chopped kale or Swiss chard

🧄 3 garlic cloves, minced

🥣 1 small onion, chopped

🌭 200 g (7 oz) Italian sausage or spicy ground pork

🧂 Salt & black pepper to taste

🍲 750 ml (3 1/4 cups) chicken or vegetable broth

🥛 200 ml (3/4 cup + 1 tbsp) heavy cream or half-and-half

🫒 1 tbsp olive oil

🌶️ Optional: red chili flakes for a spicy kick

Preparation

1️⃣ In a pot, heat 🫒 oil and sauté 🌭 sausage until browned. Set aside.

2️⃣ In the same pot, add 🧄 garlic and 🧅 onion. Cook until soft.

3️⃣ Add 🥔 potatoes and 🍲 broth. Bring to a boil, then simmer 15 min.

4️⃣ Stir in 🥬 kale and cook 5 more minutes.

5️⃣ Return sausage to the pot. Add 🥛 cream and season with 🧂 salt and pepper.

6️⃣ Simmer 5 more minutes until creamy and tender. Serve hot.
