This is the salad grandma would make when she wanted everything to feel like a vacation. Crisp cucumbers, ripe tomatoes, briny olives, and creamy feta β all tossed in olive oil and oregano. Itβs fresh, itβs simple, and it tastes like the Mediterranean sun.
π₯ 2 cucumbers, sliced
π 3 tomatoes, cut into wedges
π§ 1 small red onion, thinly sliced
π« 1/2 cup Kalamata olives, pitted
π§ 150 g (5 oz) feta cheese, cubed
πΏ 1 tsp dried oregano
π« 3 tbsp olive oil
π Juice of 1 lemon
π§ Salt and pepper to taste
1οΈβ£ In a large bowl, combine π₯ cucumber, π tomatoes, π§ onion, π« olives, and π§ feta.
2οΈβ£ Drizzle with π« olive oil and π lemon juice.
3οΈβ£ Sprinkle with πΏ oregano, π§ salt, and pepper.
4οΈβ£ Toss gently, and serve immediately.
