Description
This was grandma’s favorite “clear out the garden” dish. Every pot was different, but always full of color, beans, herbs, and that slow-simmered warmth that makes a bowl feel like a blanket. It’s summer’s answer to comfort food – one ladle at a time.
Ingredients
- 🫒 2 tbsp olive oil
- 🧅 1 small onion, chopped
- 🧄 2 garlic cloves, minced
- 🥕 1 carrot, diced
- 🥒 1 zucchini, diced
- 🍅 2 ripe tomatoes, chopped
- 🫘 1 can (400 g / 14 oz) white beans, drained
- 🌿 1 tsp dried oregano or thyme
- 🍲 750 ml (3 1/4 cups) vegetable broth
- 🍝 Optional: 1/2 cup small pasta (like ditalini or orzo)
- 🧂 Salt & pepper to taste
- 🌿 Fresh parsley or basil for garnish
Preparation
- 1️⃣ Heat 🫒 oil in a pot. Sauté 🧅 onion and 🧄 garlic until soft.
- 2️⃣ Add 🥕 carrot and 🥒 zucchini. Cook 5 min.
- 3️⃣ Stir in 🍅 tomatoes, 🫘 beans, 🌿 herbs, and 🍲 broth.
- 4️⃣ Simmer for 20 min.
- 5️⃣ Add 🍝 pasta if using, and cook until tender (about 8 min).
- 6️⃣ Season with 🧂 salt and pepper. Serve hot, topped with 🌿 fresh herbs.
