Description
Gorditas are Mexico’s rustic little corn pockets — thick, warm, and ready to fill with your favorite savory stuffing. Grandma made these on Sundays, pressing them by hand and filling the kitchen with the smell of toasted masa.
Ingredients
🌽 240 g masa harina (2 cups)
🧂 ½ tsp salt
💧 360 ml warm water (1 ½ cups)
🫒 Vegetable oil for frying
Preparation
1️⃣ Make the dough: In a bowl, combine masa harina and salt. Add warm water gradually while mixing by hand until a soft, pliable dough forms. Let rest 5 minutes.
2️⃣ Shape: Divide dough into 8 equal balls. Flatten each into a thick disk (about 1 cm thick).
3️⃣ Cook: Heat a dry skillet. Cook each gordita 2 minutes per side until golden spots appear.
4️⃣ Fry: Lightly fry each gordita in oil for 30 seconds per side until puffed and crisp.
5️⃣ Fill: Slice each gordita halfway open and stuff with your desired filling.
