🍲 Hearty, comforting and full of plant protein — this creamy lentil stew with carrots, potatoes and herbs is the perfect weeknight vegan dinner!

Ingredients

Preparation

  1. 1. 🥄 In a large pot, sauté onion and garlic in olive oil for 2–3 minutes.
  2. 2. 🥕 Add carrots and potatoes. Cook another 5 minutes.
  3. 3. 🟤 Add rinsed lentils, tomato/paste, herbs, salt and pepper. Stir well.
  4. 4. 💧 Pour in broth or water, bring to a boil, then reduce heat and simmer 35–40 minutes (until lentils are tender).
  5. 5. 🥣 Stir occasionally and adjust seasoning. Add more water if needed.
  6. 6. 🌿 Serve hot with fresh parsley and crusty bread.
