Description
🍲 Hearty, comforting and full of plant protein — this creamy lentil stew with carrots, potatoes and herbs is the perfect weeknight vegan dinner!
Ingredients
🟤 200g brown or green lentils (rinsed)
🧅 1 onion, chopped
🧄 2 garlic cloves, minced
🥕 2 carrots, diced
🥔 2 medium potatoes, cubed
🍅 1 tomato (or 2 tbsp tomato paste)
🛢️ 2 tbsp olive oil
🌿 1 tsp dried thyme or oregano
🧂 Salt & pepper, to taste
💧 1 liter vegetable broth or water
🌿 Fresh parsley for garnish (optional)
Preparation
1. 🥄 In a large pot, sauté onion and garlic in olive oil for 2–3 minutes.
2. 🥕 Add carrots and potatoes. Cook another 5 minutes.
3. 🟤 Add rinsed lentils, tomato/paste, herbs, salt and pepper. Stir well.
4. 💧 Pour in broth or water, bring to a boil, then reduce heat and simmer 35–40 minutes (until lentils are tender).
5. 🥣 Stir occasionally and adjust seasoning. Add more water if needed.
6. 🌿 Serve hot with fresh parsley and crusty bread.
