Description
Crispy on the outside and chewy inside, these scallion pancakes are a beloved street food from China. Perfect as a savory snack, side dish, or part of a dim sum spread.
Ingredients
🌾 300 g all-purpose flour (2½ cups)
💧 180 ml hot water (¾ cup)
🧂 1 tsp salt (5 g)
🌱 4 scallions (spring onions), finely chopped
🛢️ 30 ml sesame oil (2 tbsp)
🛢️ Vegetable oil for frying
Preparation
1️⃣ In a large bowl, combine 🌾 flour and 🧂 salt. Slowly pour in 💧 hot water, stirring until a dough forms.
2️⃣ Knead the dough for 8–10 minutes until smooth. Cover and rest for 30 minutes.
3️⃣ Divide dough into 4 pieces. Roll each into a thin circle.
4️⃣ Brush with 🛢️ sesame oil and sprinkle 🌱 scallions. Roll up tightly, coil into a spiral, then flatten again.
5️⃣ Heat 🛢️ vegetable oil in a skillet over medium heat. Fry pancakes 2–3 minutes per side until golden and crispy.
6️⃣ Cut into wedges and serve hot with soy sauce or chili sauce.
