Description
These juicy Mexican-style meatballs are simmered in a rich chipotle-tomato sauce that warms your soul and tingles your tongue 🔥 A rustic favorite found in home kitchens across Mexico, often served with rice or warm tortillas for dipping.
Ingredients
🥩 400 g ground beef (14 oz)
🧅 80 g onion, finely chopped (2.8 oz or 1 small onion)
🧄 2 garlic cloves, minced
🥚 1 egg
🍞 30 g breadcrumbs (1/3 cup)
🧂 Salt and black pepper to taste
🌿 2 g fresh oregano, chopped (1 tsp)
For the sauce:
🍅 300 g tomatoes, chopped (10.5 oz or ~3 medium)
🌶 1 chipotle pepper in adobo, minced
🧄 1 garlic clove
🧅 50 g onion, chopped (1.75 oz)
🧴 15 ml vegetable oil (1 tbsp)
💧 250 ml water or broth (1 cup)
Preparation
1️⃣ In a bowl, combine beef, onion, garlic, egg, breadcrumbs, oregano, salt, and pepper. Mix well and form into small balls.
2️⃣ In a saucepan, heat oil and sauté onion and garlic for sauce until soft.
3️⃣ Blend sautéed onion, garlic, tomatoes, and chipotle with water or broth until smooth.
4️⃣ Return sauce to pan and bring to a boil.
5️⃣ Gently place meatballs in sauce. Reduce heat, cover, and simmer for 25–30 minutes.
