About this recipe

These Air Fryer Mexican Beef Chimichangas are stuffed with smoky seasoned beef, black beans, Mexican-style rice, melted cheese, and roasted poblano, then folded into large flour tortillas and air-fried until blistered and deeply golden. A cool chipotle-lime crema, fresh pico de gallo, avocado, and cilantro turn them into a crispy full meal without deep frying.

Tips & variations

Tip

Do not overfill the tortillas. A compact chimichanga with tightly folded ends develops a much crispier shell and is far less likely to burst as the cheese melts in the air fryer.

Why it works

The beef filling is cooked until concentrated rather than wet, preventing the tortilla from becoming soggy. Black beans and rice give the center body, melted cheese binds everything together, and a very light coating of oil allows the flour tortilla to blister and brown surprisingly close to a traditionally fried chimichanga.

Storage and reheating

Store cooled chimichangas without toppings in an airtight container in the refrigerator for up to 3 days. Reheat directly in the air fryer at 180°C (350°F) for 5–7 minutes until hot and crisp. Store the crema and fresh toppings separately.

Variation

Replace the beef with shredded chicken tinga for a different filling, or add 80 g charred corn to the beef mixture. For extra heat, spread a teaspoon of chipotle adobo sauce inside each tortilla before adding the filling.
