Tips & variations

Tip

Toast chile de รกrbol for only a few seconds. It develops bitterness very quickly when scorched, and because this sauce uses several chiles, even one burned chile can dominate the entire dish.

Why it works

Guajillo provides deep red color and fruity chile flavor, chile de รกrbol delivers the sharp heat expected from a Diabla sauce, and chipotle adds smoke and body. Roasted tomatoes soften the chile intensity while lime keeps the rich sauce bright. Searing the shrimp separately prevents them from overcooking while the sauce reduces.

Storage and reheating

Store cooled shrimp and sauce together in an airtight container in the refrigerator for up to 2 days. Reheat very gently in a skillet over low heat only until warmed through so the shrimp remain tender. Add fresh cilantro and lime after reheating.

Variation

Add 150 g charred corn to the finished sauce for a sweeter contrast to the chile heat, or replace half of the shrimp with scallops for a richer seafood version.
