Tips & variations

Tip

Do not discard the roasting liquid. Reducing it and tossing the shredded pork back through it is what gives Cochinita Pibil its glossy color, concentrated citrus-achiote flavor, and juicy texture.

Why it works

Achiote brings earthy, peppery depth and the unmistakable red-orange color, while orange, lime, and vinegar tenderize and brighten the rich pork shoulder. Slow covered roasting dissolves the connective tissue, and the sharp pickled onion cuts directly through the richness.

Storage and reheating

Store the pork together with its cooking juices in an airtight container in the refrigerator for up to 4 days. Reheat gently in a covered skillet with a splash of water until hot, then uncover briefly to caramelize the edges. Keep the pickled onion separate and add it only when serving.

Variation

For extra Yucatรกn heat, blend half a roasted habanero into a small portion of the reduced cooking juices and serve it separately. For a smokier variation, briefly char the shredded pork in a very hot cast-iron skillet before serving.
