Tips & variations
Tip
The most important step is drying the fish and oiling the grill extremely well. Leave the fish untouched until the skin naturally releases โ trying to flip it too early is the easiest way to tear it apart.
Why it works
Butterflying exposes much more fish to the heat and smoky adobo while keeping the skin intact underneath. Guajillo provides deep red color and mild fruitiness, ancho adds earthy sweetness, citrus brightens the rich fish, and the thin mayonnaise layer helps the adobo cling and caramelize on the grill.
Storage and reheating
Remove leftover fish from the bones and refrigerate in an airtight container for up to 2 days. Reheat gently in a covered skillet over low heat or use the cold fish in tacos and tostadas. Store fresh garnishes separately.
Variation
For a smokier version, add one chipotle pepper in adobo to the chile marinade. If a whole fish is unavailable, use thick skin-on snapper or sea-bream fillets and reduce the grilling time accordingly.
