Tips & variations
Tip
Steam is what gives bolillos their characteristic thin, crisp bakery crust. Add the boiling water immediately after the bread enters the oven, then remove the steam tray halfway through baking so the crust can dry and become properly crisp.
Why it works
Bread flour provides enough gluten for an airy yet slightly chewy crumb, while the relatively lean dough keeps the crust crisp rather than soft and enriched. Shaping the rolls with tapered ends and scoring the center controls how they expand in the oven.
Storage and reheating
Bolillos are best on the day they are baked. Store completely cooled rolls in an airtight bag at room temperature for up to 2 days.
To restore the crust, lightly mist a roll with water and heat at 190ยฐC (375ยฐF) for 5โ7 minutes.
For longer storage, freeze cooled bolillos for up to 2 months and reheat directly from frozen at 180ยฐC (350ยฐF) for about 10 minutes.
Variation
Turn them into Mexican molletes by slicing the bolillos lengthwise, spreading them with refried beans and topping with Oaxaca cheese before broiling until bubbling. Serve with pico de gallo.
