About this recipe

Mexican Salsa Borracha is a dark, silky chile sauce made with toasted pasilla peppers, roasted garlic, fresh orange juice, dark beer and prunes. Mild heat, smoky depth and subtle fruit sweetness make it especially good with barbacoa, carnitas, grilled beef and warm corn tortillas.

Tips & variations

Tip

Pasilla chiles burn very quickly. Toast them only until fragrant and flexible. If they turn black or smell acrid, replace them rather than blending them into the salsa because even one burned chile can make the entire batch bitter.

Why it works

Pasilla brings earthy dried-fruit and cocoa-like depth without aggressive heat. Prunes reinforce those dark fruity notes, orange adds brightness, and beer contributes a subtle malty bitterness that keeps the salsa from becoming sweet.

Storage and reheating

Store the finished salsa in a clean airtight container in the refrigerator for up to 5 days.

Serve at room temperature or warm gently in a small saucepan over low heat for 2โ€“3 minutes.

If the salsa thickens after refrigeration, stir in a tablespoon of water before serving.

Variation

For a more traditional direction, replace the beer with pulque if available.

For an alcohol-free version, replace the beer with additional orange juice plus 60 ml water.
