Tips & variations

Tip

The ripeness of the mamey matters more than extra sugar. Properly ripe mamey should be intensely fragrant and naturally creamy; if the flesh is pale or firm, the licuado will taste flat even after sweetening.

Why it works

Mamey naturally has creamy texture and notes that pair well with vanilla and warm spices. Cacao adds bitterness and depth, evaporated milk gives the drink a richer body, and a small pinch of salt sharpens both the chocolate and fruit flavors.

Storage and reheating

This licuado is best served immediately.

Store leftovers in a sealed container in the refrigerator for up to 12 hours and shake or briefly reblend before serving.

The mamey base without ice can be refrigerated for up to 24 hours.

Do not reheat.

Variation

For a darker dessert-style version, add 20 g finely chopped Mexican dark chocolate before blending.

For a lighter version, replace the evaporated milk with additional cold whole milk and reduce the piloncillo slightly.
