Tips & variations
Tip
Cutting the corn is the hardest part. Use a very sharp heavy knife, keep the cob stable and cut slowly through the core instead of forcing the blade. Once quartered, the corn cooks quickly and curls naturally in the air fryer.
Why it works
Fresh corn becomes sweeter as it roasts, while the exposed kernel edges blister and caramelize. Chipotle brings smoky heat, lime adds acidity, Cotija contributes salty richness and Tajín sharpens the finish without making the dish heavy.
Storage and reheating
Store cooked corn ribs without crema or toppings in an airtight container in the refrigerator for up to 3 days.
Reheat in the air fryer at 180°C (350°F) for 4–5 minutes until hot and lightly crisp again.
Add crema, Cotija, cilantro and Tajín only after reheating.
Variation
For a hotter version, mix finely chopped serrano into the crema.
For a richer elote-style finish, add 1 tablespoon mayonnaise to the chipotle-lime crema.
