Description

This is the cake nona made when she wanted something sweet but not heavy. Ricotta gives it that soft, creamy texture, while fresh lemon zest brings a clean, citrusy kick that lingers in the best way. It’s not too sweet, not too rich – just right. Best served with coffee, gossip, or both.

Ingredients

Preparation

  1. 1️⃣ Preheat oven to 180°C (350°F).
  2. 2️⃣ In a bowl, whisk 🥚 eggs and 🍬 sugar until light and fluffy.
  3. 3️⃣ Add 🍋 lemon zest + juice, then 🧀 ricotta. Mix until smooth.
  4. 4️⃣ Stir in 🧈 melted butter, then gently fold in 🌾 flour and 🧂 baking powder.
  5. 5️⃣ Pour into a greased 20 cm (8-inch) round pan.
  6. 6️⃣ Bake for 30–35 min or until golden and set in the center.
  7. 7️⃣ Cool and dust with 🌿 powdered sugar before serving.
