Description
This dish was grandma’s “garden rescue” whenever zucchinis got out of control. It’s fast, it’s cheap, and it tastes like you spent way more time on it. Thin strips of zucchini melt into olive oil and garlic, hugging every strand of pasta like a summer secret.
Ingredients
🍝 250 g (9 oz) spaghetti or linguine
🥒 2 small zucchinis, grated or sliced into ribbons (about 300 g / 10.5 oz)
🧄 3 garlic cloves, thinly sliced
🫒 3 tbsp olive oil
🧂 Salt and pepper, to taste
🌶️ Optional: pinch of red pepper flakes
🧀 Optional: grated Parmesan or pecorino for topping
Preparation
1️⃣ Cook 🍝 pasta in salted water until al dente. Reserve 1/2 cup cooking water.
2️⃣ In a large pan, heat 🫒 oil and sauté 🧄 garlic until just golden.
3️⃣ Add 🥒 zucchini and cook 5–7 min until soft and slightly browned.
4️⃣ Drain pasta and add to the pan. Toss everything together.
5️⃣ Add a splash of pasta water to make it silky. Season with 🧂 salt, pepper, and 🌶️ flakes.
6️⃣ Serve warm, topped with 🧀 cheese if desired.
