Description
This rustic Balkan-style trout is roasted whole with garlic, lemon, and herbs — just the way it was cooked by the river on lazy weekends. Crispy skin, tender meat, and nothing unnecessary.
Ingredients
- 🐟 2 whole trout, cleaned (about 300 g each / 10 oz)
- 🧄 4 garlic cloves, thinly sliced
- 🍋 1 lemon, sliced into rounds
- 🌿 8 g chopped parsley (2 tbsp)
- 🧂 1 tsp salt
- 🧈 30 ml olive oil (2 tbsp)
- 🫛 Optional: a few sprigs of fresh thyme or dill
Preparation
- 1️⃣ Preheat oven to 200°C (400°F).
- 2️⃣ Prepare fish: Rinse and pat dry the trout. Make 3 shallow slashes on each side.
- 3️⃣ Stuff & season: Insert garlic and lemon slices into the cavity and cuts. Season with salt.
- 4️⃣ Drizzle: Place on parchment-lined tray, drizzle with olive oil. Add herbs on top.
- 5️⃣ Bake: Roast uncovered for 20–25 minutes, or until skin is crisp and fish flakes easily.
