  1. 1️⃣ Sear beef: Heat oil in a heavy pot, add beef chunks, and sear until browned. Remove and set aside.
  2. 2️⃣ Sauté vegetables: In the same pot, sauté onions and garlic for 5 min. Add carrots and potatoes, stir well.
  3. 3️⃣ Add tomato & paprika: Stir in tomato paste and paprika. Cook 2 minutes.
  4. 4️⃣ Return beef & season: Add beef back, season with salt, pepper, and herbs.
  5. 5️⃣ Simmer: Pour in water or broth. Cover and simmer on low heat for 90 minutes, stirring occasionally, until tender.
