Description
This traditional Balkan beef stew simmers low and slow until every bite melts in your mouth. Made with root vegetables, paprika, and love — it’s the kind of meal that gathers the whole family around the table.
Ingredients
- 🥩 600 g beef chuck, cut into chunks (1.3 lb)
- 🧅 2 onions, chopped
- 🧄 3 garlic cloves, minced
- 🥕 2 carrots, sliced
- 🥔 2 medium potatoes, cubed
- 🍅 30 g tomato paste (2 tbsp)
- 🌿 1 tsp dried thyme or marjoram
- 🧂 Salt and pepper to taste
- 🫑 7 g sweet paprika (1 tbsp)
- 🫒 45 ml olive oil (3 tbsp)
- 💧 500 ml water or beef broth (2 cups)
Preparation
- 1️⃣ Sear beef: Heat oil in a heavy pot, add beef chunks, and sear until browned. Remove and set aside.
- 2️⃣ Sauté vegetables: In the same pot, sauté onions and garlic for 5 min. Add carrots and potatoes, stir well.
- 3️⃣ Add tomato & paprika: Stir in tomato paste and paprika. Cook 2 minutes.
- 4️⃣ Return beef & season: Add beef back, season with salt, pepper, and herbs.
- 5️⃣ Simmer: Pour in water or broth. Cover and simmer on low heat for 90 minutes, stirring occasionally, until tender.
