Description
This salad captures the spirit of elote — the grilled corn you find on every Mexican street corner — but in a bowl. Sweet corn, creamy dressing, lime, and chili make it a bright and addictive side dish.
Ingredients
- 🌽 500 g corn kernels, fresh or frozen (3 ½ cups)
- 🧅 50 g red onion, finely chopped (¼ cup)
- 🧀 100 g crumbled feta or cotija cheese (¾ cup)
- 🌿 8 g fresh cilantro, chopped (2 tbsp)
- 🍋 30 ml fresh lime juice (2 tbsp)
- 🥣 60 ml mayonnaise (¼ cup)
- 🌶️ ½ tsp chili powder
- 🧂 Salt and pepper to taste
- 🌶️ Optional: extra chili flakes for more heat
Preparation
- 1️⃣ Cook the corn: Grill or sauté corn in a dry skillet over medium-high heat until lightly charred (5–7 minutes). Let cool.
- 2️⃣ Mix the base: In a large bowl, combine corn, onion, cheese, and cilantro.
- 3️⃣ Make the dressing: In a small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
- 4️⃣ Combine: Pour dressing over corn mixture. Toss to coat evenly. Chill for 10 minutes if desired.
