🍲 Hearty, comforting and full of plant protein — this creamy lentil stew with carrots, potatoes and herbs is the perfect weeknight vegan dinner!
Ingredients
- 🟤 200g brown or green lentils (rinsed)
- 🧅 1 onion, chopped
- 🧄 2 garlic cloves, minced
- 🥕 2 carrots, diced
- 🥔 2 medium potatoes, cubed
- 🍅 1 tomato (or 2 tbsp tomato paste)
- 🛢️ 2 tbsp olive oil
- 🌿 1 tsp dried thyme or oregano
- 🧂 Salt & pepper, to taste
- 💧 1 liter vegetable broth or water
- 🌿 Fresh parsley for garnish (optional)
Preparation
- 1. 🥄 In a large pot, sauté onion and garlic in olive oil for 2–3 minutes.
- 2. 🥕 Add carrots and potatoes. Cook another 5 minutes.
- 3. 🟤 Add rinsed lentils, tomato/paste, herbs, salt and pepper. Stir well.
- 4. 💧 Pour in broth or water, bring to a boil, then reduce heat and simmer 35–40 minutes (until lentils are tender).
- 5. 🥣 Stir occasionally and adjust seasoning. Add more water if needed.
- 6. 🌿 Serve hot with fresh parsley and crusty bread.
