Description
This Chinese classic is the perfect balance β tangy, spicy, and deeply warming. With tofu, mushrooms, and vinegar in a rich broth, itβs a bowl of sharp flavors that wakes you up and calms you down at the same time.
Ingredients
- π 100 g shiitake mushrooms, sliced (1 cup)
- π§ 200 g firm tofu, cut into strips (7 oz)

50 g bamboo shoots, julienned (Β½ cup)
- π§ 2 garlic cloves, minced
- π« 5 g fresh ginger, grated (1 tsp)
- π« 30 ml soy sauce (2 tbsp)
- π 15 ml rice vinegar (1 tbsp)
- πΆοΈ Β½ tsp chili oil or chili flakes
- πΎ 10 g cornstarch (1 tbsp)
- π§ 750 ml vegetable broth (3 cups)
- π§ Salt and white pepper to taste
- πΏ 4 g chopped scallions (1 tbsp, optional, for garnish)
Preparation
- 1οΈβ£ In a pot, heat a splash of oil. Add garlic and ginger, sautΓ© for 30 seconds.
- 2οΈβ£ Add mushrooms, bamboo shoots, and tofu. Stir gently.
- 3οΈβ£ Pour in broth, soy sauce, and vinegar. Simmer for 5 minutes.
- 4οΈβ£ Stir cornstarch into 2 tbsp water. Add to the soup while stirring until thickened.
- 5οΈβ£ Add chili oil and season with salt and white pepper to taste.
- 6οΈβ£ Serve hot, garnished with scallions.
