Ingredients
- 🥒 400 g cucumber (14 oz), smashed and cut into chunks
- 🧄 2 garlic cloves, minced
- 🥣 15 ml rice vinegar (1 tbsp)
- 🌾 15 ml light soy sauce (1 tbsp)
- 🍯 5 g sugar (1 tsp)
- 🌶️ 10 ml chili oil (2 tsp)
- 🌻 5 ml sesame oil (1 tsp)
- 🧂 Salt to taste
- 🌿 Optional: fresh coriander or sesame seeds for garnish
Preparation
- 1️⃣ Smash cucumber with the side of a knife, then chop into bite-sized chunks. Sprinkle with salt and let sit 10 minutes.
- 2️⃣ Drain off excess water.
- 3️⃣ In a bowl, mix garlic, vinegar, soy sauce, sugar, chili oil, and sesame oil.
