Ingredients

  • 🥒 400 g cucumber (14 oz), smashed and cut into chunks
  • 🧄 2 garlic cloves, minced
  • 🥣 15 ml rice vinegar (1 tbsp)
  • 🌾 15 ml light soy sauce (1 tbsp)
  • 🍯 5 g sugar (1 tsp)
  • 🌶️ 10 ml chili oil (2 tsp)
  • 🌻 5 ml sesame oil (1 tsp)
  • 🧂 Salt to taste
  • 🌿 Optional: fresh coriander or sesame seeds for garnish

Preparation

  • 1️⃣ Smash cucumber with the side of a knife, then chop into bite-sized chunks. Sprinkle with salt and let sit 10 minutes.
