Warm, creamy, and bursting with roasted corn flavor 🌶️🧀 Esquites is the cozy street food version of elote in a cup — a Mexican favorite that blends sweet corn with chili, lime, and tangy crema.
Ingredients
- 🌽 400 g sweet corn kernels (14 oz), fresh or frozen
- 🧈 20 g butter (1.5 tbsp)
- 🧄 1 garlic clove, minced
- 🧅 50 g white onion, finely chopped (1.75 oz)
- 🥣 60 g Mexican crema or sour cream (2 oz)
- 🧀 40 g crumbled cotija cheese (1.4 oz)
- 🍋 10 ml lime juice (2 tsp)
- 🌶 1 g chili powder (¼ tsp)
- 🧂 Salt to taste
- 🌿 Optional: chopped cilantro for garnish
Preparation
- 1️⃣ In a skillet, melt butter over medium heat. Sauté garlic and onion until translucent.
- 2️⃣ Add corn and cook 6–8 minutes until slightly charred.
- 3️⃣ Remove from heat and stir in crema, lime juice, chili powder, and salt.
- 4️⃣ Top with cotija and fresh cilantro. Serve warm or at room temperature 🌽🥄
