Ingredients
- 🍗 500 g chicken pieces with bone (thighs or drumsticks) (1.1 lb)
- 💧 1.5 L water (6 cups)
- 🧅 100 g white onion, quartered (3.5 oz)
- 🧄 3 garlic cloves
- 🥕 2 medium carrots, chopped (150 g / 5.3 oz)
- 🥔 1 large potato, cubed (200 g / 7 oz)
- 🌽 1 corn cob, cut into 3 pieces
- 🌿 A few sprigs fresh cilantro
- 🧂 Salt to taste
- 🍚 Cooked rice and lime wedges for serving
Preparation
- 1️⃣ Place chicken, water, onion, and garlic in a large pot. Bring to a boil, skim foam, and simmer for 20 minutes.
- 2️⃣ Add carrots, potatoes, corn, and salt. Simmer another 20–25 minutes until vegetables are soft.
- 3️⃣ Add cilantro and simmer 5 more minutes.
- 4️⃣ Serve hot with rice and lime wedges 🍋🍚
