Description
Golden, chewy, and sweet — Cocadas are traditional Mexican coconut macaroons made in homes and mercados across the country. These simple delights are full of tropical charm and melt-in-your-mouth magic 🥥✨
Ingredients
- 🥥 200 g grated unsweetened coconut (2 cups / 7 oz)
- 🍬 250 g granulated sugar (1¼ cups / 8.8 oz)
- 🥚 2 large eggs
- 🥛 30 ml whole milk (2 tbsp / 1 fl oz)
- 🍦 1 tsp vanilla extract
- ❄️ Pinch of salt
Preparation
- 1️⃣ Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- 2️⃣ In a bowl, whisk eggs, milk, vanilla, and salt.
- 3️⃣ Stir in coconut and sugar until fully combined.
- 4️⃣ Scoop small portions onto the tray with a spoon or small ice cream scoop.
- 5️⃣ Bake for 18–20 minutes until golden at the edges.
