Ingredients
- 🍗 500 g bone-in chicken pieces (1.1 lb)
- 🥕 2 carrots, sliced
- 🥔 2 potatoes, peeled and cubed
- 🌽 2 corn cobs, cut into thirds
- 🧅 1 onion, quartered
- 🧄 3 garlic cloves, crushed
- 🌿 4 sprigs fresh cilantro
- 🫑 1 green bell pepper, sliced
- 🍅 2 tomatoes, chopped
- 🧂 Salt to taste
- 💧 2 liters water (8 cups)
Preparation
- 1️⃣ In a large pot, place chicken, water, onion, garlic, and cilantro. Bring to a boil.
- 2️⃣ Skim off any foam, reduce heat, and simmer for 20 minutes.
- 3️⃣ Add carrots, potatoes, corn, bell pepper, and tomatoes. Cook until tender (25–30 min).
- 4️⃣ Add salt to taste.
- 5️⃣ Remove chicken, shred meat, discard bones, and return meat to the soup.
- 6️⃣ Serve hot with lime wedges and warm tortillas.
