Ingredients

- π₯ 1 medium potato, cubed
- π 150 g (5 oz) shiitake mushrooms, sliced
- π₯¬ 100 g (3.5 oz) napa cabbage, chopped
- π 100 g (3.5 oz) daikon radish, sliced
- π₯¦ 100 g (3.5 oz) broccoli florets
- π₯’ 200 g (7 oz) firm tofu, cubed
- π§ 1 L (4 cups) vegetable broth
- π₯£ 2 tbsp soy sauce
- πΆ 1 tbsp mirin (optional)

Preparation
