🥕 Earthy, savory, and lightly sweet — Kinpira Gobo is a classic Japanese fasting dish made with burdock root and carrots sautéed in sesame oil and simmered in a soy-based glaze. Perfect as a side dish, bento filler, or light standalone plate when you need grounding flavors and balance. 🍃
Ingredients
- 🥕 100 g (1 small) burdock root (gobo), julienned
- 🥕 1 medium carrot, julienned
- 🧂 1 tbsp sesame oil
- 🍜 1 tbsp soy sauce
- 🍚 1 tbsp mirin (or 1 tsp sugar if unavailable)
- 🍶 1 tsp sake (optional)
- 🌶️ A pinch of chili flakes (optional)
- 🥒 1 tsp sesame seeds (for garnish)
Preparation
- 1️⃣ Soak julienned burdock root in water for 5–10 minutes to remove bitterness.
- 2️⃣ Drain and pat dry both burdock and carrot.
- 3️⃣ Heat sesame oil in a skillet over medium heat.
- 4️⃣ Add burdock root and sauté for 2–3 minutes.
- 5️⃣ Add carrots and continue cooking for another 2 minutes.
- 6️⃣ Stir in soy sauce, mirin, and sake; cook until liquid is mostly absorbed.
- 7️⃣ Sprinkle with chili flakes (if using) and sesame seeds before serving.
