Description
🥕 Earthy, savory, and lightly sweet — Kinpira Gobo is a classic Japanese fasting dish made with burdock root and carrots sautéed in sesame oil and simmered in a soy-based glaze. Perfect as a side dish, bento filler, or light standalone plate when you need grounding flavors and balance. 🍃
Ingredients
🥕 100 g (1 small) burdock root (gobo), julienned
🥕 1 medium carrot, julienned
🧂 1 tbsp sesame oil
🍜 1 tbsp soy sauce
🍚 1 tbsp mirin (or 1 tsp sugar if unavailable)
🍶 1 tsp sake (optional)
🌶️ A pinch of chili flakes (optional)
🥒 1 tsp sesame seeds (for garnish)
Preparation
1️⃣ Soak julienned burdock root in water for 5–10 minutes to remove bitterness.
2️⃣ Drain and pat dry both burdock and carrot.
3️⃣ Heat sesame oil in a skillet over medium heat.
4️⃣ Add burdock root and sauté for 2–3 minutes.
5️⃣ Add carrots and continue cooking for another 2 minutes.
6️⃣ Stir in soy sauce, mirin, and sake; cook until liquid is mostly absorbed.
7️⃣ Sprinkle with chili flakes (if using) and sesame seeds before serving.
