Light, refreshing, and nutty — this Japanese soba salad blends earthy buckwheat noodles with crisp vegetables and a silky sesame dressing 🥢💛. Perfect as a chilled side dish or a wholesome light lunch.
Ingredients
- 🍜 200 g soba noodles (7 oz)
- 🥕 1 medium carrot, julienned
- 🥒 1/2 cucumber, julienned
- 🥬 50 g shredded red cabbage (1.8 oz)
- 🌽 50 g corn kernels (1.8 oz)
- 🌾 2 tablespoons toasted sesame seeds (20 g / 0.7 oz)
- For the dressing:
- 🌾 2 tablespoons sesame paste or tahini (30 g / 1 oz)
- 🍯 1 tablespoon honey (15 ml / 0.5 fl oz)
- 🧂 2 tablespoons soy sauce (30 ml / 1 fl oz)
- 🍋 1 tablespoon rice vinegar (15 ml / 0.5 fl oz)
- 💧 1 tablespoon water (15 ml / 0.5 fl oz)
Preparation
- 1️⃣ Cook soba noodles according to package directions, rinse under cold water, and drain.
- 2️⃣ Prepare vegetables and place in a large bowl.
- 3️⃣ Whisk together all dressing ingredients until smooth.
- 4️⃣ Toss noodles and vegetables with the dressing.
- 5️⃣ Sprinkle with toasted sesame seeds before serving.
