  1. 1. 🔥 Heat oil in a pan, season pork and sear on both sides until golden. Remove and set aside.
  2. 2. 🧅 In the same pan, sauté onion and garlic until soft. Add paprika, then deglaze with broth (and wine if using).
  3. 3. 🍖 Return meat, cover, and simmer on low for 60–75 minutes until tender.
  4. 4. 🌾 To thicken: mix flour and oil in a pan, cook until golden, then stir into the sauce. Simmer 5 min.
  5. 5. 🥔 Meanwhile, boil potatoes in salted water until soft. Drain, mash with butter and milk until smooth.
