Ingredients
- Phyllo & Fats
- ๐ Phyllo sheets: 400โ450 g (16โ18 sheets / 14โ16 oz)
- ๐ซ Sunflower oil (for brushing; or mix with melted butter): 120 ml (ยฝ cup / 4 fl oz)
- ๐ง Melted butter (optional, richer): 40 g (3 tbsp / 1.4 oz)
- Filling
- ๐ Pumpkin, peeled & coarsely grated: 800 g (5ยฝ cups / 1.76 lb)
- ๐ฌ Sugar: 120โ150 g (ยฝโยพ cup / 4.2โ5.3 oz) โ adjust to pumpkin sweetness
- ๐ฐ Walnuts, finely chopped: 100 g (1 cup / 3.5 oz)
- ๐พ Fine semolina (or dry breadcrumbs): 20 g (2 tbsp / 0.7 oz)
- ๐ฟ Ground cinnamon: 5 g (2 tsp / 0.18 oz)
- ๐ Raisins (optional, soaked & drained): 60 g (ยฝ cup / 2.1 oz)
- ๐ Orange zest (optional): 1 tsp (2 g / 0.07 oz)
- ๐ง Salt: 1 g (โ

- Finish
- ๐ฏ Honey or powdered sugar (serving): to taste

Preparation
- 1๏ธโฃ Pre-cook filling: In a wide pan, cook ๐ grated pumpkin with ๐ฌ sugar and ๐ง salt over medium 8โ10 min, stirring, until it softens and most moisture evaporates. Off heat; stir in ๐ฐ walnuts, ๐ฟ cinnamon, ๐พ semolina, ๐ raisins, and ๐ zest. Cool to lukewarm.
- 2๏ธโฃ Prep phyllo: Heat oven to 190ยฐC / 375ยฐF. Brush a 30ร40 cm / 12ร16 in pan with a little ๐ซ oil/๐ง butter.
- 3๏ธโฃ Rolls: Lay 2 sheets ๐ phyllo, brush lightly with fat. Scatter a thin, even layer of pumpkin mix (about 1/8 of filling). Roll up from the long edge into a log; coil into the pan or arrange logs side by side. Repeat to use all sheets/filling.
- 4๏ธโฃ Top & bake: Brush the tops generously with remaining fat. Bake 30โ40 min until deep golden and crisp.
- 5๏ธโฃ Serve: Rest 10 min. Drizzle a thread of ๐ฏ honey or dust with powdered sugar. Slice warm or at room temp.
