Ingredients
- Crust:
- 🍪 130 g digestive or graham biscuits
- 🧈 60 g melted butter
- Filling:
- 🧀 400 g cream cheese (room temp)
- 🍚 120 g sugar
- 🥚 2 eggs
- 🥛 120 ml sour cream or Greek yogurt
- 🍋 1 tsp lemon juice
- 🍵 2½ tsp matcha powder (sifted)
- 🌾 1 tbsp cornstarch
Preparation
- 1️⃣ Crust: Crush biscuits finely, mix with melted butter, and press into lined springform pan. Chill 15 min.
- 2️⃣ Preheat oven: 160°C.
- 3️⃣ Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one by one, then sour cream, lemon juice, cornstarch, and matcha. Mix just until combined.
- 4️⃣ Bake: Pour onto crust. Bake 45–50 min, until center jiggles slightly.
- 5️⃣ Cool: Let rest in oven (door ajar) 30 min, then cool to room temp. Chill 4 h before slicing.
- 6️⃣ Serve: Dust with a little matcha or whipped cream for contrast.
