  1. 1️⃣ Cook soba: Bring a large pot of salted water to boil. Add noodles and cook according to package instructions (usually 4–5 min). Stir occasionally.

  3. 3️⃣ Sauce: In a small saucepan, combine dashi, soy, mirin, and sugar. Bring just to a simmer; cool completely.
