Ingredients
- 🍜 180 g dried soba noodles (buckwheat)
- 💧 1.5 L water (for boiling)
- 🧂 ½ tsp salt
- Dipping sauce (mentsuyu):
- 🍶 120 ml dashi
- 🍶 40 ml soy sauce
- 🍯 40 ml mirin
- 🍚 1 tsp sugar
- Toppings:
- 🧅 1 spring onion, finely chopped
- 🫚 1 tsp grated ginger or wasabi
- 🌿 1 tbsp nori (shredded seaweed)
- 🍋 Few drops yuzu or lemon (optional)
Preparation
- 1️⃣ Cook soba: Bring a large pot of salted water to boil. Add noodles and cook according to package instructions (usually 4–5 min). Stir occasionally.
- 2️⃣ Rinse: Drain immediately and rinse under cold running water to remove starch. Chill in ice water 2–3 min.
- 3️⃣ Sauce: In a small saucepan, combine dashi, soy, mirin, and sugar. Bring just to a simmer; cool completely.
- 4️⃣ Serve: Pile soba on a bamboo tray or plate. Sprinkle with nori and serve with chilled dipping sauce, onions, and ginger/wasabi on the side.
