Ingredients
- 🥃 Umeshu (Japanese plum liqueur): 60 ml (2 fl oz)
- 🍋 Fresh lemon juice: 15 ml (1 tbsp / ½ fl oz)
- 🍯 Simple syrup (1:1): 7.5 ml (½ tbsp / ¼ fl oz)
- 🥚 Egg white (optional, foam): 30 g (1 oz)
- 🧊 Ice cubes: 5–6
- 🍋 Lemon peel or shiso, for garnish: 1 strip/leaf
Preparation
- 1️⃣ Dry shake: In a shaker add umeshu, lemon, syrup, egg white (if using). Shake 10–12 s without ice to aerate.
- 2️⃣ Wet shake: Add ice and shake hard 12–15 s until very cold.
- 3️⃣ Serve: Double-strain into a chilled coupe. Express a strip of lemon peel over the top and garnish.
