Preparation

  1. 1️⃣ Dry shake: In a shaker add umeshu, lemon, syrup, egg white (if using). Shake 10–12 s without ice to aerate.
  2. 2️⃣ Wet shake: Add ice and shake hard 12–15 s until very cold.
  3. 3️⃣ Serve: Double-strain into a chilled coupe. Express a strip of lemon peel over the top and garnish.
