Ingredients
- Base sauce
- π₯ 120 ml tahini, well stirred (Β½ cup / 4 fl oz)
- π§ 90β120 ml cold water, as needed (β
βΒ½ cup / 3β4 fl oz)
- π 45 ml fresh lemon juice (3 tbsp / 1Β½ fl oz)
- π§ 6β8 g fresh garlic, finely grated (2 small cloves / 0.2β0.28 oz)
- π§ 3 g fine sea salt, or to taste (Β½ tsp / 0.11 oz)
- Flavor boosters (optional but recommended)
- πΏ 5 g fresh parsley, finely chopped (2 tbsp / 0.18 oz)
- πΆοΈ 1β2 g ground cumin (ΒΌβΒ½ tsp / 0.04β0.07 oz)
- π― 5 ml maple syrup or honey (1 tsp / 0.17 fl oz)
Preparation
- 1οΈβ£ Prepare the tahini base
- Add tahini to a medium bowl and stir it well so the natural oils are fully combined and smooth before adding any liquids.
- 2οΈβ£ Add lemon and garlic
- Whisk in the fresh lemon juice and grated garlic until the mixture thickens and becomes slightly lighter in color. It may look very stiff at this stage β that is normal.
- 3οΈβ£ Season with salt and spices
- Add the salt, cumin and maple syrup or honey if using. Whisk again until everything is evenly distributed. Taste and adjust salt or lemon to your liking.
- 4οΈβ£ Thin with cold water
- Slowly drizzle in the cold water, 1β2 tbsp at a time, whisking continuously. The sauce will first seize and become very thick, then gradually loosen into a smooth, pourable cream. Stop adding water when you reach the consistency you like (thick for dipping, thinner for drizzling).
- 5οΈβ£ Fold in fresh herbs
- Stir in the finely chopped parsley. Let the sauce rest for 5 minutes so the flavors meld and the garlic softens.
- 6οΈβ£ Final check and serve
- Taste once more before serving. If it tastes too sharp, add a tiny splash of water or a touch more sweetener; if it feels flat, add a pinch of salt or a squeeze of lemon. Serve in a small bowl or drizzle directly over your dish.
