  1. 1️⃣ Prepare the tahini base
  2. Add tahini to a medium bowl and stir it well so the natural oils are fully combined and smooth before adding any liquids.

  4. Whisk in the fresh lemon juice and grated garlic until the mixture thickens and becomes slightly lighter in color. It may look very stiff at this stage – that is normal.
  5. 3️⃣ Season with salt and spices
  6. Add the salt, cumin and maple syrup or honey if using. Whisk again until everything is evenly distributed. Taste and adjust salt or lemon to your liking.
  7. 4️⃣ Thin with cold water
  8. Slowly drizzle in the cold water, 1–2 tbsp at a time, whisking continuously. The sauce will first seize and become very thick, then gradually loosen into a smooth, pourable cream. Stop adding water when you reach the consistency you like (thick for dipping, thinner for drizzling).

  10. Stir in the finely chopped parsley. Let the sauce rest for 5 minutes so the flavors meld and the garlic softens.
