Hook

Ingredients
- 🍋 60 g yuja marmalade, stirred smooth (3 tbsp / 2.1 oz)
- 🍯 15 ml honey (1 tbsp / ½ fl oz)
- 🫚 10 g fresh ginger, finely grated (1 tbsp / 0.35 oz)
- 🍋 15 ml fresh lemon juice (1 tbsp / ½ fl oz)
- 🧂 1 pinch fine sea salt
- 🧊 250 g ice (about 2 cups / 8.8 oz)
- 💧 180–220 ml chilled sparkling water (¾–1 cup / 6–7.4 fl oz)
- 🍋 1 lemon slice, for garnish
- 🌿 1 mint sprig, optional
Preparation
- 1️⃣ Make the base
- In a shaker or jar combine yuja marmalade, honey, grated ginger, lemon juice, and a pinch of salt. Stir 20 seconds until fully dissolved.
- 2️⃣ Chill fast
- Add ice and shake 10 seconds, or stir hard 15 seconds if you do not have a shaker.
- 3️⃣ Strain for a clean finish
- Strain into a tall glass packed with fresh ice, using a fine strainer if you want it extra smooth.
- 4️⃣ Top and balance
- Top with sparkling water, pour slowly to keep bubbles. Stir once, gently, just to combine.
- 5️⃣ Garnish
- Add a lemon slice and optional mint. Serve immediately.
