Ingredients

Preparation

  1. 1️⃣ Freeze the milk base
  2. Whisk whole milk, heavy cream, condensed milk, and salt until fully combined. Pour into a shallow tray, about 20Γ—30 cm (8Γ—12 in), so it freezes faster and evenly. Freeze for 4 hours until solid.
  3. 2️⃣ Make the strawberry sauce
  4. In a small saucepan combine strawberries, sugar, and lemon juice. Cook over medium heat for 6–8 min, stirring, until glossy and slightly thick. Cool 10 min, then chill 20 min so it is cold for serving.
  5. 3️⃣ Make bingsu snow without a machine
  6. Break the frozen milk slab into chunks. Add to a powerful blender or food processor and pulse 10–15 times, then blend 10–20 seconds until it turns into fine, fluffy snow. Do not overblend or it will melt into slush.
  7. 4️⃣ Chill the serving cups
  8. Place 2–4 glasses in the freezer for 10 minutes. Cold cups keep the snow fluffy longer.
  9. 5️⃣ Assemble like a Korean cafe
  10. Add 1 tbsp strawberry sauce to the bottom of each cup. Fill with milk snow, pressing very lightly, never compacting.
  11. 6️⃣ Top and finish
  12. Spoon more strawberry sauce on top. Add sliced strawberries, mochi cubes, and nuts. Drizzle condensed milk in a thin ribbon and serve immediately.
