Ingredients
- Milk snow base
- π₯ 500 ml whole milk (2 cups / 17 fl oz)
- π₯ 150 ml heavy cream (β
cup / 5 fl oz)
- π― 60 ml sweetened condensed milk (ΒΌ cup / 2 fl oz)
- π§ 1 g fine sea salt (β
tsp / 0.04 oz)
- Strawberry sauce
- π 300 g strawberries, hulled (2 cups / 10.6 oz)
- π¬ 35 g sugar (3 tbsp / 1.2 oz)
- π 10 ml lemon juice (2 tsp / 0.34 fl oz)
- Toppings
- π 200 g fresh strawberries, sliced (1Β½ cups / 7 oz)
- π‘ 80 g mochi or injeolmi rice cakes, cubed (Β½ cup / 2.8 oz)
- π° 30 g sliced almonds or pistachios (ΒΌ cup / 1.1 oz)
- π― 30β45 ml sweetened condensed milk for drizzle (2β3 tbsp / 1β1Β½ fl oz)
Preparation
- 1οΈβ£ Freeze the milk base
- Whisk whole milk, heavy cream, condensed milk, and salt until fully combined. Pour into a shallow tray, about 20Γ30 cm (8Γ12 in), so it freezes faster and evenly. Freeze for 4 hours until solid.
- 2οΈβ£ Make the strawberry sauce
- In a small saucepan combine strawberries, sugar, and lemon juice. Cook over medium heat for 6β8 min, stirring, until glossy and slightly thick. Cool 10 min, then chill 20 min so it is cold for serving.
- 3οΈβ£ Make bingsu snow without a machine
- Break the frozen milk slab into chunks. Add to a powerful blender or food processor and pulse 10β15 times, then blend 10β20 seconds until it turns into fine, fluffy snow. Do not overblend or it will melt into slush.
- 4οΈβ£ Chill the serving cups
- Place 2β4 glasses in the freezer for 10 minutes. Cold cups keep the snow fluffy longer.
- 5οΈβ£ Assemble like a Korean cafe
- Add 1 tbsp strawberry sauce to the bottom of each cup. Fill with milk snow, pressing very lightly, never compacting.
- 6οΈβ£ Top and finish
- Spoon more strawberry sauce on top. Add sliced strawberries, mochi cubes, and nuts. Drizzle condensed milk in a thin ribbon and serve immediately.
